WHere is an easy take on a cocktail from our latest menu. Designed as a party-sized premix that's packed full of flavours of the holiday season, rendering it perfect for hosting a holiday party. Reserve the remaining citrus syrup to use in breakfast cocktails, desserts, or for additional servings of bikinis.
Bikini Recipe
Yields 10 people
For the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
For the Cocktail (yields 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
Making the Cordial: Put all the items in a pot, bring to a light boil, agitating until the sugar dissolves. Next, take off the burner and leave to cool fully. Transfer into an clean bottle, cap it and refrigerate it in the fridge, it will last for around a month.
Preparing the Batch Mix: Combine every spirits and syrup into a large bottle, allow it to infuse for one hour, then filter it best through a fine cloth, so it's completely strained.
For serving: Add 85ml of your batch mix into a stirring glass packed with ice, and agitate carefully for one minute until cold. Filter into an cold coupe glass or similar, garnish with the cranberries and finish with a light spray of the essential oil above the glass.
